- round or flank steak, cut in 3 x 4-inch strips
- salt and pepper to taste
- cooked sausage
- dill pickles
- carrots, cut in julienne
- parsley, chopped
- olives, chopped
- 1 1/2 c. stock
- 1 1/2 to 2 Tbsp. tomato paste
Directions

1Prepare steak strips. Season with salt and pepper.

2Place in the middle of each strip of steak 2 tablespoons cooked sausage, 1 dill pickle, a portion of carrots, parsley and onions. Starting at one side, roll up (like when making cabbage roll). Fasten with toothpick. Dredge each roll in the flour. Brown each roll.

3Place in a casserole.

4Add tomato paste to stock. Pour around beef rolls.

5Cover casserole. Bake slowly at 300° or simmer for 90 minutes or until tender.
