  • Quick Puff Pastry
  • 3 lb. trimmed fillet of beef
  • salt and pepper to taste
  • vegetable oil
  • 1/4 c. chopped, fresh mushrooms
  • 1 Tbsp. butter
  • 1 Tbsp. brandy
  • 1 c. prepared or canned liver pate
  • 1 egg, beaten

Directions

    Early in the day or the day before, prepare Quick Puff Pastry and reserve.

    Trim any fat from fillet; season with salt and pepper.

    Brush with oil.

    Place on rack in roasting pan; roast in preheated 400° oven for 30 minutes (for a rare roast).

    Remove from oven, cool to room temperature.
