Ingredients
- 3 c. dry green split peas
- 5 c. water
- 1 bay leaf
- 2 tsp. salt
- 2 Tbsp. oil
- 1 c. minced onion
- 3 cloves crushed garlic
- 1 c. minced celery
- 1 small, thinly sliced potato
- 2 c. sliced carrots
- 1/4 c. dry red wine
- 1/4 tsp. dry mustard
- 1/4 tsp. thyme
- few drops sesame oil
- 3 Tbsp. vinegar
- 1 c. chopped tomatoes
- 1/4 c. freshly chopped parsley
Directions

1Start early in the day.

2In a large pot, put peas, water, bay leaf and salt; simmer, covered, for 3 to 4 hours.

3Remove bay leaf.

4Saute onion, garlic, celery, potato and carrots in oil.

5If necessary, add a little water to steam.

6When tender, add to soup.

7Continue simmering.

8About 5 minutes before serving, add wine, mustard, thyme and sesame oil.

9Just before serving, add vinegar, tomatoes and parsley.
