- 3 cups rolled oats
- 1 cup shredded coconut
- 1 cup pecans, coarsely chopped
- 1/4 cup toasted wheat germ
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 cup maple syrup
- 1/2 cup honey
- 1/4 teaspoon cinnamon
- 1 large egg white
Directions

1Preheat oven to 300 degrees.

2Combine all ingredients but the egg whites in a large bowl, tossing to coat evenly.

3Whisk egg white in a small bowl until frothy. Stir into granola mixture, distributing it throughout.

4Spread in a single layer on a parchment-lined baking sheet. Bake for 45-55 minutes or until browned and dry to the touch.

5Halfway through baking, use a large spatula to turn over sections of the granola. Rotate the pan if granola bakes unevenly.

6Once finished baking, cool completely and then break into desired sized clusters.
