  • 1 pkg. Evans black beans, soaked at least 24 hours in cold water
  • 1/2 lb. turkey ham
  • 2 medium onions, chopped
  • 1 medium green pepper
  • olive oil
  • 6 Tbsp. dried beef broth
  • 1 tsp. chili powder
  • 1/2 tsp. cayenne powder
  • 1 tsp. garlic
  • 1 tsp. cilantro

Directions

    Drain beans and cover with cold water.

    Boil gently until tender; drain.

    Saute ham, onions and pepper in olive oil in kettle.

    Put beans back into kettle and add 5 cups of water, beef broth, chili powder, cayenne, garlic and cilantro.
