Black Bean Soup

  • 1 gal. OSCAR MAYER Bacon, chopped
  • 2 qt. onions, chopped
  • 1-1/4 qt. celery, chopped
  • 1-1/4 qt. red peppers, chopped
  • 3/4 cup southwestern seasoning
  • 3-1/4 gal. canned black beans, drained, rinsed
  • 1-3/4 cups lime juice
  • 10 each bay leaves
  • 2-1/2 qt. water
  • 1-1/2 Tbsp. salt
  • 1 tsp. black pepper

    Cook bacon in large saucepot until crisp.

    Remove bacon from stockpot, reserving 1 cup of the drippings (or 1/4 cup for trial recipe) in stockpot.

    Set bacon aside.

    Add onions, celery, red peppers and seasoning to drippings in stockpot; saute 5 min.

    Add reserved bacon, the beans, lime juice and bay leaves; simmer 10 min., stirring occasionally.

    Remove bay leaves; discard.

    Add bean mixture, in batches, to food processor container; cover.

    Process until pureed.

    Return to stockpot.

    Add water; cook until heated through, stirring occasionally.

    Season with salt and black pepper.
