  • 4 c. washed black beans
  • cold water as needed
  • 3 celery sticks
  • 3 large onions, finely chopped
  • 1/2 c. butter
  • 2 1/2 Tbsp. flour
  • 1/2 c. finely chopped parsley
  • rind and bone of 1 cooked smoked ham
  • 3 leeks, thinly sliced
  • 4 bay leaves
  • 1 Tbsp. seasoned salt
  • 1 tsp. fresh ground black pepper
  • 1 c. dry Madeira wine
  • pinch of cayenne pepper
  • croutons and sour cream (optional)

Directions

    Soak beans overnight in enough water to cover, then drain. Add 5 quarts cold water and cook beans over low heat for 1 1/2 hours.
