- 1 egg, lightly beaten
- 1 c. milk
- 2 Tbsp. vegetable oil
- 1/2 c. blue cornmeal
- 3/4 c. flour
- 1/4 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
Directions

1Butter 12 (3/4-inch) muffin forms or line with paper liners. Preheat oven to 400°.

2In a medium bowl, combine egg, milk, oil and blue cornmeal.

3Mix well, 8 to 10 minutes to soften cornmeal. In another bowl, mix flour, sugar, baking powder and salt.

4After meal mixture has rested, stir to re-mix and add to flour mixture. Stir, but gently, to combine.

5Fill each cup 2/3 full. Bake 15 minutes or until brown.

6Let pan cool for 3 minutes.

7Turn muffins upside down and serve.
