  • 2 eggs, separated
  • 1 c. sugar
  • 1/2 c. Crisco or butter
  • 1/2 tsp. salt
  • 1 1/2 c. blueberries, dusted with 1/4 c. flour
  • 1 1/4 c. flour, sifted
  • 1 tsp. baking powder
  • 1/3 c. milk

Directions

    Beat egg whites; add 1/4 cup of the sugar, beat until stiff and set aside.

    Cream the shortening, salt, remaining sugar and egg yolks; beat until creamy.

    Sift flour and baking powder; add to creamed mixture with the milk.

    Fold in the beaten egg whites and floured blueberries.

    Turn into well-greased square pan (9 x 9-inch pan);

    sprinkle with sugar. Bake at 325° or 350° for 30 minutes.
