- 1 ham hock
- 2 qt. water
- 3 bunches collards, picked and washed
- 1 tsp. salt
- 1 tsp. sugar
- 1/3 c. bacon drippings
- dash of red pepper
- 1 clove garlic, minced
Directions

1Boil ham hock in 4-quart pot about 30 minutes.

2Add greens, salt, pepper, bacon drippings and sugar.

3Cook 45 minutes or until greens are tender.

4Remove from pot and cut into bite size pieces. Liquid is very good with hot cornbread and onions.
