Boiled Collards

Ingredients

  • 1 ham hock
  • 2 qt. water
  • 3 bunches collards, picked and washed
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/3 c. bacon drippings
  • dash of red pepper
  • 1 clove garlic, minced

Directions

    Boil ham hock in 4-quart pot about 30 minutes.

    Add greens, salt, pepper, bacon drippings and sugar.

    Cook 45 minutes or until greens are tender.

    Remove from pot and cut into bite size pieces. Liquid is very good with hot cornbread and onions.
