Ingredients

  • 2 c. any bran cereal
  • 1 c. buttermilk or 1 c. milk and 1 Tbsp. vinegar
  • 1 1/4 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/4 tsp. baking soda
  • 1/8 tsp. salt
  • 3/4 c. sugar
  • 1/4 c. oil
  • 1 egg
  • 1 c. blueberries, raisins or chopped nuts (optional)

Directions

    Preheat oven to 350°.

    Mix cereal with buttermilk and let sit in large bowl for 10 minutes.

    Add all other ingredients and mix by hand until blended.

    Add fruits or nuts to batter.

    Use paper liners in muffin pan or grease and flour 1 bread pan.

    Bake muffins for 18 to 20 minutes and bread for 40 to 45 minutes.
