- 1 1/2 c. whole bran cereal
- 1 c. buttermilk
- 1 egg
- 1/4 c. cooking oil (canola)
- 1 c. all-purpose flour
- 1/3 c. brown sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 c. raisins
Directions

1Grease 10 to 12 muffin cups; set aside.

2Combine bran and buttermilk; let stand 3 minutes or until liquid is absorbed.

3Stir in egg and oil or melted shortening.

4Set aside.

5Stir together the flour, brown sugar, baking powder, baking soda and salt.

6Add bran mixture all at once, stirring until moistened (batter will be thick); add raisins.

7Bake in 400° oven 20 to 25 minutes.

8Makes 10 to 12 muffins.
