Ingredients

  • 1 Tbsp. quick cooking tapioca
  • 3/4 c. sugar
  • 1/4 tsp. salt
  • 1 1/4 c. water
  • 1 egg
  • 1 Tbsp. butter or margarine
  • 2 Tbsp. brandy

Directions

    Combine tapioca, sugar, salt and water in a saucepan.

    Cook and stir over medium heat until mixture comes to a boil.

    Remove from heat.

    Beat the egg until light and foamy.
  5. 5
    Add the hot mixture to the egg, stirring well.

    Return to the saucepan and place over low heat.

    Cook and stir for 3 minutes but not allow the mixture to boil.

    Remove from the heat and stir in the butter and brandy. Cool stirring once after 20 minutes.

    This is real good over plain pound cake, fruit cake, or plum pudding.
