- 1 Tbsp. quick cooking tapioca
- 3/4 c. sugar
- 1/4 tsp. salt
- 1 1/4 c. water
- 1 egg
- 1 Tbsp. butter or margarine
- 2 Tbsp. brandy
Directions

1Combine tapioca, sugar, salt and water in a saucepan.

2Cook and stir over medium heat until mixture comes to a boil.

3Remove from heat.

4Beat the egg until light and foamy.

5Add the hot mixture to the egg, stirring well.

6Return to the saucepan and place over low heat.

7Cook and stir for 3 minutes but not allow the mixture to boil.

8Remove from the heat and stir in the butter and brandy. Cool stirring once after 20 minutes.

9This is real good over plain pound cake, fruit cake, or plum pudding.
