- 2 flour tortillas
- 2 eggs, beaten
- 12 cup green pepper, diced
- 3 tablespoons green onions, chopped
- 12 cup ham, diced
- 14 cup cheddar cheese, shredded
- taco seasoning, to taste
Directions

1Beat eggs, add green peppers, green onions and ham.

2Heat frying pan and coat with cooking spray or oil.

3Scramble fry egg mixture, season heavily with taco seasoning, top with cheese, cook until melted.

4Meanwhile, heat flour tortillas.

5Top tortillas with eggs and roll up burrito style, (fold in sides and roll up).

6Serve with salsa and sour cream.

7Serve alone or with hashbrowns or rice.

8I sometimes add sliced mushrooms too.

9Can use cooked bacon or sausage too.
