- 1 3/4 c. self-rising flour
- 1/3 c. sugar
- 2/3 c. milk, at room temperature
- jam (blackberry, strawberry, etc.)
- 1/2 c. shortening (Crisco)
- 1 egg, at room temperature
- 1 tsp. vanilla
Directions

1Cream shortening and sugar until fluffy.

2Beat in egg, milk and vanilla.

3Add flour and stir until just moist; leave lumpy. Fill muffin tins 1/2 full; top with teaspoon of jam.

4Cover each with remaining batter.

5Sprinkle muffins with cinnamon/sugar mixture before baking.

6Bake at 400° for 15 to 20 minutes.

7Yields 9 to 12 muffins.
