  • 1 egg
  • 1/4 c. margarine
  • 2 tsp. baking powder
  • 1 c. skim milk
  • 1/4 c. sugar
  • 1 3/4 c. flour, sifted
  • 1/2 tsp. salt

Directions

    Beat egg.

    Mix in sugar and melted margarine. Sift together flour, baking powder and salt.

    Add to sugar and margarine mixture, alternately with milk. Fill greased muffin cups 2/3 full. Bake in a 375° oven about 20 minutes or until golden brown.

    Makes 14 to 16 small muffins.
