Ingredients

  • 2 large tomatoes, diced
  • 2 cucumbers, peeled and chopped
  • 5 scallions with 1/3 green part left on, cleaned and finely chopped
  • 1 green pepper, seeded and diced
  • 3 c. tomato juice
  • 10 1/2 oz. can consomme
  • 1/4 c. red wine vinegar
  • 1/3 c. olive oil
  • 1 large clove garlic, crushed
  • 3 Tbsp. parsley
  • 1/4 tsp. hot pepper sauce
  • salt and pepper to taste
