Brie Bruschetta

Ingredients

  • 1 whole Tomato, Finely Chopped
  • 1 clove Garlic, Crushed
  • 1 teaspoon Olive Oil
  • 1- 1/2 teaspoon Dried Sweet Basil, Crushed
  • 1/4 teaspoons Salt
  • 2 dashes Pepper
  • 4 ounces, weight (125g) Brie Cheese Round, With Rind
  • 1 whole Baguette Bread, Sliced, Toasted Or Plain

Directions

    Combine first 6 ingredients in a small bowl.

    Stir.

    Let stand at room temperature for 1 hour.

    Set cheese round in an ungreased small shallow casserole dish (I use a pie plate).

    Using a slotted spoon and allowing most of the liquid to drain off, transfer tomato mixture over top of cheese round.

    Discard remaining liquid.

    Bake uncovered, in a 375 degrees (F) oven for 8-10 minutes until cheese is soft inside of the rind.

    Transfer onto serving platter using a pancake lifter.

    Surround with baguette slices.
