Ingredients

  • 2 c. broccoli, cooked, drained and finely chopped
  • 1 c. boiled ham, diced
  • 1/4 c. Parmesan cheese, freshly grated
  • salt and pepper to taste
  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 6 Tbsp. cold butter
  • 2/3 c. buttermilk

Directions

  1. 1
In a bowl, combine the broccoli, ham, cheese, salt and pepper. In another bowl, sift together flour, baking powder, salt and baking soda.
  2. 2
Add cold butter, cut into bits, and blend until mixture resembles cornmeal.
  3. 3
Stir in buttermilk and form dough into a ball.
  4. 4
Roll the dough into a 16 x 6-inch rectangle on a floured sheet of wax paper; brush with 2 tablespoons melted butter and spread the broccoli mixture evenly over the dough, leaving a 1/2-inch border.
  5. 5
Beginning with a long side, roll up the dough tightly, lifting it with the wax paper and ending seam side down. Cut the dough crosswise into 1-inch slices; put the slices with a cut side down in well buttered muffin tins.
  6. 6
    Brush lightly with melted butter.
  7. 7
Bake in the upper third of a preheated 450° oven for 20 to 25 minutes, or until they are golden.
  8. 8
Let the buns stand in the tins for 1 minute; loosen the edges with a spatula and serve.
  9. 9
    Makes 16 biscuits.
