Broccoli Cornbread

  • 2 pkg. Jiffy corn muffin mix
  • 1 (8 oz) pkg. frozen chopped broccoli, thawed & drained
  • 1 small onion (I use dehydrated)
  • 4 eggs (or eggbeaters)
  • 1 c. lite cottage cheese
  • 1 stick oleo (or 1 packet butter buds)

Directions

    Blend eggs and cottage cheese. Add to muffin mix. Add oleo, onion and broccoli. Spray 9 x 13 inch pan with Pam. Bake at 400° for 30 minutes or until brown.
