Broccoli Cornbread

  • 2 boxes Jiffy corn muffin mix
  • 2 small boxes (frozen) broccoli, thawed and squeezed out
  • 2 sticks oleo, melted
  • 1 c. chopped onion
  • 4 eggs, beaten
  • 1 c. cottage cheese

Directions

    Oil pan, 9 x 13-inch.

    Melt oleo and pour over cornbread mix. Add eggs.

    Mix well.

    Add all other ingredients.

    Bake at 400° for about 1 hour or until done.

    Check at 45 minutes.

    I like to use fresh broccoli when I have it.
