Broiled Shad Roe

  • 1 pair shad roe
  • 2 1/4 teaspoons salt, divided
  • 2 teaspoons vinegar
  • 1/8 teaspoon pepper
  • 1 tablespoon butter or margarine, melted
  • Chopped fresh parsley

Directions

    Place roe with water to cover in a heavy skillet; add 2 teaspoons salt and vinegar. Simmer 15 minutes; remove from heat, and drain. Immediately cover with cold water, and let stand 5 minutes. Drain. Carefully remove loose membrane to separate roe into 2 portions.

    Place roe on rack of broiler pan. Sprinkle with remaining salt and pepper; brush with melted butter. Broil 5 inches from heating element 5 minutes on each side or until lightly browned. Transfer to a warm serving platter; sprinkle with parsley, and serve immediately.
