Bulgur Pilaf Recipe

  • vegetable cooking spray
  • 1 c. minced onion
  • 1 c. coarsely shredded carrot
  • 1 c. bulgur, (cracked wheat) uncooked
  • 10 Tbsp. bulgur, (cracked wheat) uncooked
  • 1/2 c. currants
  • 1/2 tsp salt
  • 2 c. water
  • 2 Tbsp. pine nuts, toasted

Directions

    Coat a medium saucepan with cooking spray; place over medium heat till warm.

    Add in onion and carrot; sautee5 min or possibly till tender.

    Add in bulgur, currants, and salt; stir well.

    Add in water; bring to a boil.

    Cover, reduce heat and simmer 10 min or possibly till bulgur is tender and liquid is absorbed.

    Yield: 5 servings (serving size: 1 c.).
