Butternut Squash

  • 1 medium butternut squash
  • 1 Tbsp. sugar
  • 1/2 c. red hots candy (2 oz. pkg.)
  • 1/2 orange juice
  • 1/4 tsp. salt

    Cut squash in half lengthwise and discard seeds.

    Slice into 1/2-inch slices crosswise and remove peel. Place in a 9 x 13-inch pan.

    Sprinkle with sugar.

    Heat orange juice in microwave dish. Dissolve candy in the orange juice.

    Pour over squash. Sprinkle with salt.

    Cover with foil and bake at 375° for 30 to 35 minutes. Place liquid from baking pan into small saucepan and boil until thick.

    Pour over squash. Yields 4 servings.
