  • 1 medium butternut squash
  • 1/2 c. water
  • 1/4 c. chopped onion
  • 1 c. finely diced unpeeled apple
  • 2 Tbsp. butter or margarine
  • 1 c. cottage cheese
  • 1/8 tsp. each cinnamon and ginger
  • 1/4 tsp. each salt and pepper
  • 1 c. Cheddar cheese
  • dried parsley

Directions

    Slice squash in half lengthwise.

    Place face down on a baking dish.

    Add 1/2 cup water.

    Bake at 350° for 45 minutes or until flesh is tender and shell is firm enough to be stuffed.
