"Caesar Salad"

Ingredients

  • 1 head romaine lettuce
  • 1 egg, boiled for 1 minute
  • 4 tsp. olive oil
  • 1/2 clove garlic (optional) or garlic salt or powder
  • 1/2 large lemon
  • 3 anchovies (optional)
  • 1/4 to 1/2 Parmesan cheese, grated
  • salt to taste
  • coarsely ground pepper to taste
  • 1 c. seasoned Caesar salad croutons

Directions

    Break lettuce into salad bowl; sprinkle with salt and plenty of freshly ground pepper.

    Crush garlic and add to olive oil.

    Pour over greens and toss well until each piece is well coated with the oil.

    Then, break in the 1 minute cooked egg.

    Squeeze in juice of 1/2 lemon, add anchovies (cut into small pieces).

    Add Parmesan cheese and croutons.

    Toss and serve.
