"Caesar Salad"

- 1 head romaine lettuce
- 1 egg, boiled for 1 minute
- 4 tsp. olive oil
- 1/2 clove garlic (optional) or garlic salt or powder
- 1/2 large lemon
- 3 anchovies (optional)
- 1/4 to 1/2 Parmesan cheese, grated
- salt to taste
- coarsely ground pepper to taste
- 1 c. seasoned Caesar salad croutons
Directions

1Break lettuce into salad bowl; sprinkle with salt and plenty of freshly ground pepper.

2Crush garlic and add to olive oil.

3Pour over greens and toss well until each piece is well coated with the oil.

4Then, break in the 1 minute cooked egg.

5Squeeze in juice of 1/2 lemon, add anchovies (cut into small pieces).

6Add Parmesan cheese and croutons.

7Toss and serve.
