- 12 oz. spaghetti
- 2 tbsp. oil
- 1/2 c. plain dry bread crumbs
- 1 tbsp. minced garlic
- 1 chicken-broth cube
- 1 head escarole
- 1 can flat anchovies
- 5 plum tomatoes
- 13 c. grated Parmesan cheese
Directions

1Cook spaghetti in lightly salted boiling water as package directs.

2Meanwhile heat 1 Tbsp oil in a large nonstick skillet over medium-high heat.

3Add bread crumbs and, stirring often, cook 2 to 3 minutes until toasted.

4Pour into a medium bowl.

5Wipe out skillet.

6Heat remaining 1 Tbsp oil in skillet over medium heat.

7Add garlic and saute 1 minute or until fragrant.

8Add 1 cup water and the broth cube.

9Cook, stirring to dissolve cube.

10Add escarole, cover and, stirring once or twice, cook 3 minutes or until just wilted.

11Drain pasta and return to pot.

12Add anchovies; toss with pasta until anchovies break up.

13Add escarole, broth and tomatoes; toss to mix and coat.

14Pour into serving bowl.

15Stir cheese into bread crumbs; sprinkle on pasta.

16Toss just before serving.

17Serve with breadsticks.

18Anchovies are a standard ingredient in Caesar salad.

19If you don't like them, leave them out.
