Cappuccino Parfait

Ingredients
- 1 pkg. unflavored gelatin
- 2 1/4 c. strong, cold coffee
- 1/4 c. brown sugar
- 1 c. evaporated nonfat milk
- 1 tsp. vanilla
- 2 Tbsp. Kahlua or other coffee flavored liqueur (optional)
Directions

1Combine gelatin and 1/2 cup coffee in a small bowl; let stand 1 minute.

2Heat remaining coffee to a simmer in small saucepan. Add gelatin mixture and sugar to hot coffee.

3Cook over low heat, stirring constantly, until gelatin and sugar dissolve.

4Remove from heat; stir in evaporated milk and vanilla.

5Cool.

6Pour into an 8 x 8-inch pan.

7Freeze until almost frozen.

8Spoon mixture into blender or food processor.

9Add liqueur; process until smooth.

10Return to pan; freeze until firm.

11Spoon into parfait glasses; serve immediately.
