- 1 lb linguine
- 1 tablespoon olive oil
- 3 shallots
- 2 -3 garlic cloves
- 3 slices bacon or 3 slices pancetta
- 1/4 cup cream (room temp)
- 4 egg yolks (room temp)
- 3/4 cup parmesan cheese or 3/4 cup romano cheese
- salt
Directions

1Cook Pasta in a large pot of salted, boiling water.

2Cook shallots, garlic and Bacon or Pancetta in 1Tbs Olive Oil till soft.

3Reserve a mug full or pasta water and drain pasta.

4Add Pasta to shallots, garlic and bacon/pancetta and combine.

5Turn off heat. Stir around for 2minutes, allowing it to cool off slightly.

6Add cream and combine.

7Add egg yolks and combined.

8Add reserved pasta water as needed to loosen sauce.

9Add salt and cheese and ENJOY!
