- 2 c. sliced carrots, cooked and mashed
- 1 1/2 c. soft bread crumbs
- 1 c. (4 oz.) shredded sharp Cheddar cheese
- 1/2 tsp. salt
- 1/4 tsp. pepper
- dash of hot sauce
- 1 egg white
- 1 1/4 c. coarsely crushed cornflakes
Directions

1Combine carrots, bread crumbs, cheese, salt, pepper and hot sauce.

2Toss lightly.

3Beat egg whites (at room temperature) until stiff peaks form.

4Fold into carrot mixture (mixture may be chilled at this time).

5Shape mixture into 1-inch balls and roll in cornflakes.

6Place balls on lightly greased baking sheet.

7Bake at 375° for 30 minutes or until golden brown.

8Makes 1 dozen.
