- 1 c. white stone-ground cornmeal
- 3/4 tsp. salt
- 1 Tbsp. baking powder
- 2 eggs, beaten
- 1/2 c. corn (preferably cream-style)
- 1/2 c. sour cream
- 1/2 c. buttermilk
- 1 Tbsp. shortening or bacon drippings
Directions

1Sift together meal, salt and baking powder.

2In separate bowl, stir together beaten eggs, corn, sour cream and buttermilk. Combine liquid and dry ingredients and stir well.

3Put shortening into an 8-inch iron skillet that you have preheated for a few minutes on top of the stove.

4Spoon batter into skillet.

5Bake at 450° for about 15 minutes or until done.

6Invert onto a plate and serve.
