- 4 eggs, beaten slightly
- 1 1/2 c. Mazola oil
- 2 c. sugar
- 2 c. cake flour
- 2 tsp. cinnamon
- 2 tsp. soda
- 1 tsp. salt
- 3 c. finely grated carrots
Directions

1Preheat oven to 350°.

2Mix together the eggs and oil.

3Add sugar.

4Sift together the flour, cinnamon, soda and salt.

5Add to egg mixture, then add carrots.

6Bake in three 9-inch cake pans at 350° for 30 to 40 minute or until done.

7Ice with cream cheese icing.

8Serves 16.
