- 3 c. shredded carrot
- 1 c. light oil
- 2 c. flour
- 2 c. sugar
- 1 tsp. each baking soda, baking powder and salt
- 4 eggs
- nuts (optional)
- cinnamon, nutmeg, raisins and coconut (optional)
Directions

1Mix together carrot, oil and eggs; add sugar.

2Mix very well with electric mixer.

3In separate bowl mix all dry ingredients, then

4add slowly to first mixture.

5Use 2 (8 inch) round pans, a 9 x 13-inch pan or 2 large bread loaf pans.

6Pour into greased pans and bake at 325° for one hour.
