  • 3 c. shredded carrot
  • 1 c. light oil
  • 2 c. flour
  • 2 c. sugar
  • 1 tsp. each baking soda, baking powder and salt
  • 4 eggs
  • nuts (optional)
  • cinnamon, nutmeg, raisins and coconut (optional)

Directions

    Mix together carrot, oil and eggs; add sugar.

    Mix very well with electric mixer.

    In separate bowl mix all dry ingredients, then

    add slowly to first mixture.

    Use 2 (8 inch) round pans, a 9 x 13-inch pan or 2 large bread loaf pans.

    Pour into greased pans and bake at 325° for one hour.
