  • 2 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 tsp. vanilla
  • 1 1/2 c. oil
  • 3 c. grated carrots
  • 1 c. chopped nuts
  • 4 eggs
  • 1 tsp. cinnamon

Directions

    Mix ingredients together and put in ungreased pan or Bundt pan. Bake at 325° for 1 1/2 hours in Bundt pan or 1 hour in loaf pan.
