Ingredients

  • 3 c. flour
  • 2 tsp. soda
  • 1/2 tsp. salt
  • 3 tsp. cinnamon
  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 1 lb. carrots, shredded or grated
  • 1 (15 oz.) can crushed pineapple, drained
  • 1 c. coconut
  • 2 tsp. vanilla
  • 3 eggs
  • 1 c. chopped nuts

Directions

    Sift together flour, soda, cinnamon and salt.

    Mix together salad oil and sugar.

    Add vanilla and eggs.

    Beat until blended. Add half of dry ingredients.

    Mix well and beat in carrots, pineapple, coconut and nuts.

    Add rest of dry ingredients and beat until well blended.

    Bake in angel food cake pan or 11 x 13 x 2-inch pan at 350° until brown and toothpick comes out clean when tested.

    Ice with Cream Cheese Icing.
