  • 3 c. carrots, grated
  • 1 1/2 c. salad oil
  • 2 c. self-rising flour
  • 1 c. black walnuts, chopped
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 4 eggs
  • 2 c. sugar
  • 1/4 tsp. walnut extract

Directions

    Mix all ingredients together until batter is smooth and well blended.

    Pour into a greased tube pan with removable bottom. Bake at 350° for 1 1/2 hours or until done.

    Remove from oven and glaze white hot.
