- 1 c. raisins
- 2 1/3 c. flour
- 3/4 c. shortening
- 3 eggs
- 2 c. packed finely shredded carrots
- 1 tsp. ground cinnamon
- 1 1/2 c. sugar
- 3/4 c. milk
- 1/2 c. chopped nuts
Directions

1Cover raisins with boiling water; let stand for 5 minutes. Drain.

2Combine flour and cinnamon.

3Beat sugar, shortening and eggs until fluffy.

4Add flour mixture and milk; beat on medium speed for 2 minutes.

5Stir in carrots, raisins and nuts.

6Spread into greased and floured 13 x 9-inch baking pan or 2 (9-inch) round cake pans for 30 to 35 minutes at 350°.

7Frost with lemon cream cheese frosting.
