  • 1 1/2 c. sugar
  • 1 c. salad oil
  • 3 egg yolks
  • 2 1/2 Tbsp. hot water
  • 1 c. grated carrot
  • 1 1/2 c. flour
  • 1 1/2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. allspice
  • 1/2 tsp. soda
  • 1/2 tsp. salt

Directions

    Mix the first 5 ingredients. Add the remaining ingredients and mix well. Fold in 1 cup chopped nuts.

    Beat 3 egg whites until stiff and fold in. Bake in tube pan for 1 hour at 350°.
