- 1 1/2 c. oil
- 2 c. sugar
- 3 eggs
- 2 c. grated carrots
- 1 can crushed pineapple, drained
- 2 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1 c. chopped nuts
Directions

1Cream oil, sugar and eggs well; add pineapple and carrots.

2Mix well.

3Sift dry ingredients and add to creamed mixture.

4Add nuts and vanilla last.

5Beat well.

6Bake in a large pan for 30 to 35 minutes.

7Check middle with clean knife and continue baking if necessary until knife comes out clean.
