- 5 eggs
- 2 c. sugar
- 1 c. cooking oil
- 2 tsp. cinnamon
- 2 c. flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 c. pecans, chopped
- 2 c. raw carrots, grated
- 1 c. crushed pineapple
Directions

1In large bowl, beat together eggs, sugar, oil and cinnamon. Set aside.

2In separate bowl, sift together flour, soda and baking powder.

3Add to egg mixture.

4Stir in nuts, carrots and pineapple. Grease and flour two 9-inch pans and divide mixture between them. Bake at 350° for 35 to 40 minutes.

5Cool and frost.
