Ingredients
- 1 1/2 c. flour
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. baking powder
- 1/4 tsp. ground nutmeg
- 1 c. shredded carrots
- 1/2 c. sugar (granulated)
- 1/2 c. brown sugar, packed
- 1/2 c. cooking oil
- 1 egg
- 1/2 c. chopped nuts
- 1/2 c. raisins (optional)
Directions

1Stir together first 6 ingredients.

2In another bowl, stir together next 5 ingredients.

3Stir flour mixture into carrot mixture. Add nuts and raisins.

4Spoon into a greased 8 x 4 x 2-inch loaf pan.

5Bake 1 hour at 350° or until a toothpick comes out clean. Cool 10 minutes.

6Remove.

7Cool on wire rack.

8Wrap and store overnight before serving.

9Makes 1 loaf.
