- 2 lb. carrots, peeled cooked and mashed
- 3/4 cup half and half
- 3 eggs
- 1-1/2 tsp. fresh minced parsley
- 1 tsp. finely minced onion
- Salt and pepper, to taste
- 2 tsp. dill weed
- 1 pkg. (10 oz.) frozen peas, cooked
Directions

1Combine first 7 ingredients.

2Pour into a well-greased 6 cup ring mold.

3Bake at 350F for 35-40 minutes or until knife inserted in the middle comes out clean.

4Let stand 10 minutes.

5Unmold unto serving plate.

6Fill center with peas.
