- 1 lb. carrots, thinly sliced
- 1/4 c. golden raisins
- 1/4 c. I Can't Believe It's Not Butter!
- 3 Tbsp. honey
- 1 Tbsp. lemon juice
- 1/4 tsp. ground ginger
- 1/4 c. sliced, unpeeled almonds
Directions

1Cook carrots, covered, in 1/2-inch boiling water 8 minutes; drain.

2Turn carrots into a 1-quart baking dish.

3Stir in raisins, I Can't Believe It's Not Butter!, honey, lemon juice and ginger. Bake, uncovered, in a preheated 375° oven 35 minutes.

4Stir occasionally.

5Spoon into serving bowl.

6Sprinkle with almonds. Yield:
