  • 2 c. sugar
  • 1 c. flaked coconut
  • 3/4 c. buttermilk
  • 3/4 c. vegetable oil
  • 3 eggs
  • 2 tsp. vanilla
  • 1 (8 oz.) can crushed pineapple
  • 1 c. chopped pecans

Directions

    Combine first 9 ingredients in mixing bowl. Mix at medium speed for 5 minutes. Fold in the drained pineapple and pecans. Bake at 350° for 30 minutes or until done in a 9 x 13 pan.
