Cauliflower Soup

  • 10 c. chicken broth
  • 1 head cauliflower
  • 1 c. broccoli
  • 3 carrots, peeled
  • 1 onion, chopped in chunks
  • 1 tsp. parsley
  • 1 tsp. dill seed
  • 1 tsp. pepper
  • 1 tsp. dill weed
  • 2 tsp. vegetable oil

Directions

    Saute the roughly chopped onion in oil until light brown.

    Add the onion to a large soup pot.
  3. 3
    Add the chicken broth, chopped cauliflower and broccoli to the onion.

    Add all of the spices. Simmer the soup (but do not let the soup boil) for 1 hour.

    When the vegetables are soft, remove the soup from the stove and cool. Puree the cooled soup.

    Return to the pot, reheat and serve.
