- 8 potatoes
- 6 cups chicken stock
- 2 cups water
- 20 green onions, with tops, diced
- 14 cup chives
- 1 12 cups half-and-half
- 14 teaspoon white pepper
- 1 teaspoon sea salt
- 12 cup unsalted butter, melted
Directions

1In a large pot,, bring stock and water to a boil.

2add potatoes and bring back to a boil.

3simmer gently for 20 minutes.

4drain and put back in pan.

5cover with a clean dish towel for a few minutes to get rid of excess moisture.

6Put green onions in a saucepan with pepper and milk.

7simmer for five minutes and then drain, reserving milk

8mash potatoes until smooth, stirring in enough milk to create creamy consistency.

9stir in scallions and chives.

10season with salt.

12make a well in the center and pour in hot melted butter.
