- 2 chicken breasts, steamed or baked and diced
- 3 whole eggs
- 2 c. vegetables of choice, chopped
- 6 medium mushrooms, diced
- 1/4 c. onions, diced
- 1 1/2 oz. Mozzarella cheese
- 2 oz. rice, boiled
Directions

1Stew the vegetables, mushrooms and onions in a small amount of water.

2Mix the chicken and eggs together.

3Drain the vegetable mixture from the water and add to the chicken and eggs.

4Stir mixture in a nonstick frying pan (Pam spray works well).

5Add cheese; blend well.

6Serve over rice.
