  • 2 chicken breasts, steamed or baked and diced
  • 3 whole eggs
  • 2 c. vegetables of choice, chopped
  • 6 medium mushrooms, diced
  • 1/4 c. onions, diced
  • 1 1/2 oz. Mozzarella cheese
  • 2 oz. rice, boiled

Directions

    Stew the vegetables, mushrooms and onions in a small amount of water.

    Mix the chicken and eggs together.
  3. 3
    Drain the vegetable mixture from the water and add to the chicken and eggs.

    Stir mixture in a nonstick frying pan (Pam spray works well).

    Add cheese; blend well.

    Serve over rice.
