Chard Stuffed Prosciutto

  • 3 tablespoons olive oil
  • 1 bunch swiss chard, chopped (about 6 cups)
  • 3 garlic cloves, minced
  • 2 tablespoons balsamic vinegar
  • 14 teaspoon salt
  • 18 teaspoon pepper
  • 12 lb thinly sliced prosciutto

Directions

    In a large frying pan, heat olive oil over medium heat.

    Add greens and cook, tossing, until wilted, 1-2 minutes.

    Stir in garlic, vinegar, salt and pepper.

    Cook until greens are just tender, about 1 minute.

    Remove from heat.

    Lay prosciutto slices flat.

    Place a generous tablespoon of greens at one end of each slice and roll into a tight cylinder, taking care that a bit of green protrudes from each open end.

    Serve at room temperature or slightly chilled.
