  • 6 pounds chicken leg/thigh quarters and breast quarters, trimmed of excess skin and fat
  • 1/2 cup kosher salt
  • 1/4 cup sugar
  • 1/2 cup bottled smoke
  • 1/4 cup Cheater Chili Dry Rub (page 45)

Directions

    To brine the chicken, Place it in an extra-large 2-gallon sealable plastic bag set in a large bowl.

    POUR the salt and sugar into a 1-quart plastic bottle with a tight-fitting lid.

    Add 3 cups of cold water.

    Cover tightly and shake vigorously to dissolve the salt and sugar.

    POUR the brine over the chicken and add 5 cups of cold water and the bottled smoke.

    Seal the bag and blend by gently massaging the bag.

    REFRIGERATE the chicken for 1 hour.

    Drain and rinse, discarding the brine.

    Pat dry.

    HEAT the oven to 325F.

    Place the chicken on a large rimmed baking sheet and rub on all sides with the dry rub.

    Cook for 1 1/2 hours or until fork-tender.
