- 1 medium onion, chopped (1/2 c.)
- 10 oz. can enchilada sauce
- 1/3 c. milk
- 1 1/2 c. shredded Cheddar cheese
- 3 Tbsp. cooking oil
- 1 can refried beans
- sour cream or guacamole (optional)
- 1/2 lb. ground beef
- 1 can mushroom soup
- 4 oz. can diced green chili peppers
- 1 c. shredded carrot
- 10 (6-inch) corn tortillas
- 1/2 c. chopped pitted ripe olives
Directions

1In a 12-inch skillet, cook ground beef and onion until meat is brown and onion is tender.

3Stir in enchilada sauce, soup, milk and chili peppers.

4Bring to a boil; reduce heat. Simmer, covered, for 10 minutes.
