Cheddar-Bean Enchiladas

  • 1 medium onion, chopped (1/2 c.)
  • 10 oz. can enchilada sauce
  • 1/3 c. milk
  • 1 1/2 c. shredded Cheddar cheese
  • 3 Tbsp. cooking oil
  • 1 can refried beans
  • sour cream or guacamole (optional)
  • 1/2 lb. ground beef
  • 1 can mushroom soup
  • 4 oz. can diced green chili peppers
  • 1 c. shredded carrot
  • 10 (6-inch) corn tortillas
  • 1/2 c. chopped pitted ripe olives

Directions

    In a 12-inch skillet, cook ground beef and onion until meat is brown and onion is tender.

    Drain fat.

    Stir in enchilada sauce, soup, milk and chili peppers.

    Bring to a boil; reduce heat. Simmer, covered, for 10 minutes.
